Bacon and egg breakfast cups

Ingredients - Serves 4-6

300g Hans Oliving Rindless Pan-sized Bacon
1 Olive oil spray
12 eggs
100g mozzarella cheese, grated
1 tbsp chives, finely chopped (or any other fresh herb such as parsley)
2 tsp sea salt
1 tsp black pepper

Step 1

Spray a non-stick muffin tray with olive oil then line each cup with bacon by looping and pressing it in.

Step 2

Cook in a fan-forced oven at 200°C for 5-7 minutes, until bacon is brown on the edges.

Step 3

Remove tray from oven and gently crack an egg into each cup. Sprinkle cheese, herbs, salt and pepper into each cup.

Step 4

Return to the oven and cook for 8-10 minutes or until egg is just set.

Step 5

Remove from oven and allow to cool slightly. Using a butter knife, gently pry out each bacon and egg cup and serve hot or warm.

Can be served with tomato chutney and crusty bread.
