Cheese kransky with cannellini beans, tomato, red onion and yellow capsicum

Ingredients - Serves 3-4

250g Hans Oliving Cheese Kransky
4 tbsp olive oil
1 tsp sea salt
2 x 400g cans cannellini beans, drained and rinsed
1 garlic clove, minced
½ tsp chilli flakes
1 small red onion, cut into thin wedges
250g cherry tomatoes, cut in half
1 yellow capsicum, cut into thin strips
2 tbsp red wine vinegar
1 cup parsley, roughly chopped

Step 1

Slice the kransky into 1cm slices on the angle and place in deep-dish baking tray.

Step 3

Bake at 200°C in a fan-forced oven for 20 minutes.

Step 4

Add the red wine vinegar and fresh parsley and gently mix and serve immediately.
