Frittata with ham, spinach, parmesan, feta and a potato base

Ingredients - Serves 4-6

100g Hans Oliving Sliced Naturally Smoked Ham, cut into strips
300g potatoes, peeled and parboiled
4 tbsp olive oil
10g butter
80g spinach
8 large eggs
125g (½ cup) cream
50g feta cheese, crumbled
50g parmesan cheese, grated

Step 1 

Grate the parboiled potato and fry in olive oil and butter in a medium-hot pan, forming a crisp, even layer at the bottom.

Step 2

Add the ham and spinach on top of the potato.

Step 3

Mix the egg, cream, feta and parmesan in a bowl and gently pour over the ingredients in pan, ensuring everything in the pan is evenly covered. Cook in pan for about 5 minutes, until the sides have set.

Step 4

Place in preheated, fan-forced oven at 180°C for 15 minutes or until the egg is set. Remove from pan and serve.

Can be served with fresh thyme, cracked pepper and chilli flakes.
