Ham, tomato and mozzarella free form lasagne

Ingredients - Serves 4-6

200g Hans Oliving Sliced Traditional Ham
1 cup brown onions, diced
2 garlic cloves, minced
2 bay leaves
2 tbsp Italian herb mix
2 tbsp olive oil
1 X 400g can chopped tomatoes
2 tbsp tomato paste
1 tsp salt
¼ tsp pepper
1 tsp red wine vinegar
400g lasagne sheets
200g fresh mozzarella cheese, cut into half-centimetre slices
½ cup fresh basil, torn
20g parmesan cheese, shaved

Step 1

In a pan, sauté the onions, garlic, bay leaves and Italian herb mix in olive oil until translucent. Add the tomatoes, tomato paste, salt, pepper and ham and gently simmer for 20 minutes. After simmering, add the vinegar and stir through.

Step 2

Meanwhile, prepare the lasagne sheets as per packet instructions.

Step 3

In a deep-dish baking tray, drizzle olive oil and some of the sauce. Layer a sheet of lasagne, sauce, ham, more sauce and mozzarella cheese. Create 2 layers of this as a single portion and make 3-4 portions on the tray.

Step 4

Place in a 180°C oven for 15 minutes or until the cheese is just melted. Serve with fresh basil and shaved parmesan.

Store-bought Napolitano sauce can be substituted into the recipe.
