Ham-wrapped grilled asparagus with poached egg on toast

Ingredients - Serves 3-4

100g Hans Oliving Sliced Traditional Ham
1 bunch asparagus
4 tbsp olive oil
½ tsp sea salt
1½ tbsp white vinegar
4 fresh eggs
4 Toasted sourdough bread slices
¼ tsp freshly cracked black pepper

Step 1

Snap or slice off the bottom 5 cm of the asparagus and discard, then tightly wrap slices of ham around the asparagus stalks.

Step 2

Lay ham wrapped asparagus on a plate or tray, drizzle with olive oil and sprinkle with salt.

Step 3

Sear on a hot griddle plate for about 5-6 minutes, carefully turning after 3 minutes. Set aside.

Step 3

Bring water and vinegar to the boil and then turn down to simmer. Crack eggs into water and poach eggs for 3 minutes.

Step 4

Serve ham wrapped asparagus on sourdough toast with a runny-yolk poached egg on top and freshly cracked black pepper.

Can be served with finely chopped parsley.
