Spring minestrone with Polish sausage

Ingredients - Serves 6-8

250g Hans Oliving Polish Sausage, cut into 1cm cubes
¼ cup olive oil
1 cup leeks, sliced
1 cup carrots, sliced
1 cup celery, sliced
1 cup sugar snap peas
1 cup green beans, cut into 2cm pieces
1 cup zucchini, sliced
1 cup potato, sliced
1 cup brown onions, diced
2 garlic cloves, minced
2 bay leaves
2 x 400g cans chopped tomatoes
1½L chicken stock
200g spaghetti, broken into small batons (or any pasta of choice)
1 cup fresh basil, torn
200g parmesan cheese, grated

Step 1

In a large pot, brown the sausage in olive oil. Then add the remaining diced vegetables, garlic and bay leaves and sauté for 10 minutes.

Step 2

Add the canned tomatoes and chicken stock and bring to a boil. Once boiling, reduce to a gentle simmer for 20 minutes.

Step 3

Add the broken spaghetti and cook for a further 8 minutes until the pasta is al dente.

Step 4
Serve with basil and grated parmesan and crusty bread.

Can be served with thyme.
