Twiggy stick and spinach Spanish tortilla

Ingredients - Serves 1-3

200g Hans Oliving Mild Twiggy Sticks
2 tbsp olive oil
1 garlic clove, minced
100g baby spinach baby spinach
4 eggs

Step 1

Slice 2 twiggy sticks thinly on an angle, and sauté with olive oil, garlic and spinach in a pan until spinach is just wilted.

Step 2

In a bowl, beat the eggs and then pour into the pan.

Step 3

Gently stir the egg, bringing the outside edges in until it becomes less runny.

Step 4

Cook until egg is set and the top is still moist and creamy.


Serve on its own or with chilli flakes and crusty bread.
